Madison’s Bistro Moderne Shangri-La EDSA Hotel Ortigas Mandaluyong. Fine dining restaurant at the Shangri-La EDSA Hotel opened in February 2014 by Chef Giovanni Sias and Chef Hylton Le Roux. Chef Giovanni Sias graduated from the Italian Culinary Institute of Sassari in Sardinia, Italy in 1991. He honed his culinary skills working as a chef in hotels and restaurants all over the world. He has worked in Switzerland, Amsterdam, and most recently New York, where he was recognized as one of the leading chefs in the city. Chef Sias enjoys infusing traditional Italian cuisine with contemporary elements to create innovative dishes – a skill he applied when conceptualizing the dishes for Madison’s. Born to a family of chefs, Hylton Le Roux began his culinary career in the UK by winning a junior chef competition. He went on to train under well-renowned Michelin-star chefs Gordon Ramsey and Heston Blumenthal where he developed immense discipline in the kitchen. Eventually, Chef Le Roux became head chef of numerous award-winning gastro pubs in London. His career in the Philippines includes stints as an instructor in one of the leading culinary institutes in Manila, executive chef in a private country club, and his own catering company, Pi Catering.
Highly recommended are the pea soup with crispy Prosciutto, Speck and Goat Cheese Mousse, Baby Arugula Salad with Foie Gras and the Lamb Shank.
